You are supposed to flip your steak just once to allow it to form a nice crust is the advise we’re given over and over. However, doing this deprives you of the opportunity for the inside of your meat to cook well. Flipping your steak frequently allows even cooking of the inside. The crust might not turn out as nice but at least the inside of your steak will be well cooked and flawless.
